Day 3: Veggie Scramble and Homemade Juice

Fresh Veggie Scramble

Ingredients:

  • 3 eggs (whisked)

  • 1 medium potato

  • 1 small zucchini

  • Optional: kale leaves, spinach leaves, diced bell peppers

  • ¼ onion (diced)

  • 2 cloves garlic

  • Herbs of choice and salt and pepper

  • Olive oil

Other Materials:

  • Pan

  • Stove Top

  • Spatula

Directions:

  1. Chop veggies into half inch squares and mince garlic

  2. 2 saute onion, garlic and herbs in the olive oil

  3. Add potatoes, zucchini until browned

  4. Add more veggies if desired

  5. Pour in eggs and scramble until cooked.

  6. Enjoy this egg-cellent recipe!

*Challenge: Try making an omelet instead!


Homemade Lemonade or Orange Juice

Ingredients/ Materials:

  • Fresh lemons or oranges

  • Juice press

  • Knife and cutting board

  • Pitcher

  • Cups

  • Optional sweetener for Lemonade: sugar or honey or agave syrup

  • Wooden spoon

  • Optional: ice

Directions:

It’s juice making time! Pick and wash fresh oranges and/or lemons. Cut citrus fruits  in half carefully with a knife on a cutting board. Next, use a juice press or squeeze the fruit by hand into a pitcher. Remove seeds. For lemonade stir in optional sweetener or sugar or honey or agave syrup with a wooden spoon. Enjoy fresh squeezed orange juice with breakfast or refreshing lemonade in the afternoon sun!
